All Equipment Needed To Open A Donut Shop

Donut shops require both large-scale operating equipment and small paraphernalia.


Baking equipment specialist Darren Sydorko advises that when buying equipment for your donut business, you should approach it already well-versed in your options. Be aware that the world of baking equipment sales is a highly specialized one, and you need to be a serious prospect for a supplier to sit with you to discuss your equipment needs. Be prepared before you shop by taking a class, hiring a consultant or learning about the donut business first-hand.


Fryers


For a donut business, you will need fryers, rather than ovens, to produce donuts. Fryers can be either gas or electric, and depending on the size of the pan or screen, can make from 80 dozen to 100 to 150 dozen donuts per hour. A space-saving countertop donut robot can automate the procedure; it deposits the donut into the fryer at a rate of 43 dozen donuts per hour. However, Sydorko cautions that donut robots are designed more for frying cake donuts than yeast donuts; while the latter tend to be the mainstay of a donut shop, they also require additional handling prior to frying.


Proofing Equipment


To make yeast-raised donuts, you will need a proofer to provide a temperature-controlled environment for the dough to rise. This can be a mobile proofer that can hold multiple sheet pans at a time, and can be maneuvered to different parts of the bakery. Proofing boxes specially designed for donuts can work together with the assembly line nature of donut production.


Icing Tables, Tumblers, Fillers


Glazing gives donuts the glossy sheen that makes them so appealing. Icing stations with a glazing attachment smoothly and uniformly drench donuts in a bath of glaze. Sugaring tables contain large bowls kept inside drawers to finish donuts in sugar. An alternate device is a tumbler, a revolving drum into which donuts can be sent for sugar coating. Filling machines automate the process of injecting fillings into donuts.


Cutters, Depositors


Donut shops require a host of peripheral gadgets and small accessories to run seamlessly. Among these accessories are donut cutters, which may be either hand-held or built into a dough sheeter as a cutting station. Cutters are necessary to make bar shapes and other raised donuts from sheets of dough. Donut depositors are another item that are useful for donut shops, as they crank out cake donut dough into the required shape and drop the pieces into the fryer. Depositors can be hand-operated and squeezed, hand-cranked or motorized.
